what im Eating

I watched a video today of a lady who lives completely off the grid in Costa Rica, ( a personal goal of mine) and is a raw food yogi to say the least. i admire her, she grows her own food and just eats strait from the plants which is the highest form a nutrients. I was once a vegetarian, turned vegan, turned back again to a carnivore. but i found out many years later that i was not informed on how to get my nutrients, i was 16 a the time and was while would look up recipes online but knew little about getting the nutrients i needed. lets just say being veggie for 2 years was rough, and when i turned vegan i lasted 2 month before a night of cheese pizza and regrets turned me away from the whole veggie scene all together.

seeing this woman in the video pluck a leaf from a plant and just eat it really made my mouth water.
currently i eat meat about 2-3 times a week, and that's usually when i am eating out because i never by meat at the grocery store. My friends all think I'm crazy when i take a bell pepper or tomato or spinach and just eat it strait from the fridge like its an apple. but that's just how i like it, that's how my parents raised me to like food, in its purest form. the produce section has always been my good friend and veggies hold a special place in my heart, could i go without meat, yeah i proly could. but I feel I have a bit more to learn about proper nutrition before i do.

Raw Spinach Taboule Salad
I have been purchasing this wonderful grain called taboule recently and have used in in just about every dish i make regularly accompanying my raw tomato bell pepper binges. but today i got a little more creative with how i eat it, and made a salad in ode to the off grid lady Amy.

ingredients:
  • Taboule (add hot water let cool in fridge)
  • tomato
  • green snap peas
  • shitake mushrooms
  • bell pepper
  • red onion (may cause bad breath)
  • almonds
  • olive oil
  • lemon
combine all in a bowl and eat! drink some green tea or fruit juice and its a delicious nutritious meal. without dressing it is good, but if you'd like you can put a dressing of your choice. sometimes i put Sriracha hot sauce in my taboule but that because i am a spicy  food fanatic!!! enjoy
